Tuesday was Summer Solstice and all I can conjure up these days are Swedes sacrificing Florence Pugh in Midsommar. It’s the day that receives the most amount of light in the northern hemisphere. It also happened to be one of the hottest days of this week. It reached, what felt like low 40s. I felt like I was bathing in hot, thick, toxic air.
When the days are long and the climate is cruel, you might be keen to grab some non-dairy ice cream. An iced jasmine bubble tea (low-sugar or no sugar). Or even a nice glass of white wine. Instead, might I suggest: The Salad. The salad is low effort and high reward. It essentially comes together in one bowl. It’s salty, bright, “cheesy”, tangy, raw, cold, fresh and crunchy. It’s satiating and filling. Your bowels will thank you. No bloating either. It’s really just a kale with tofu.
But it’s that good.
THE SALAD
Special gadgets: air fryer or frying pan.
Ingredients:
Kale (any greens work, but kale has a lot of texture and hold)
Vegetables of your choice, generally I just use:
purple cabbage
red onions
Carrots could work, so could bell peppers, maybe cucumbers
Firm tofu (medium firm or extra firm is also fine)
Garlic powder
Sea salt
Black pepper
Turmeric
Nutritional yeast (a very generous amount)
Lemon juice (half a lemon would be for two servings)
Extra virgin olive oil (drizzle as much or as little)
Instructions:
Caveat: there are no measurements. I just wing it and it just works out every time. Sorry!
In a large bowl, add kale and your vegetables. Top with salt, black pepper, turmeric, nutritional yeast, lemon juice and olive oil. Massage the kale and vegetables with your hands until it becomes tender and everything is coated in the dressing. Place back the fridge to keep the salad cold.
Gently break up the tofu into bite sized chunks. You can also slice them into squares, but it loses texture. Coat in sea salt, black pepper and garlic powder. Place in an air fryer until golden brown and crispy.
Plating: add kale mixture to a bowl. Add tofu on top.
That’s it!
Enjoy with THE DRINK. In a glass, add: ice, turmeric, black pepper and lemon juice. Fill with sparkling water. It’s basically kombucha without the fermentation. Say goodbye to inflammation!

I would also add to your salad recipe that sautéing the kale actually tastes delicious, I’d recommend that over raw but I know it’s not as great for 40 degree weather. I went with a bottle of Orangerie wine that day.
I’m surprised you didn’t document the skunk or at least talk about the smell (which, by the way, is pretty much nonexistent in the apt now but still conveniently lives on silas’ neck). We put the AC in to bring down the humidity which helps to keep the smell away.
